Chocolate Covered Peanut Butter Pretzel Sandwiches

There are health foods.  This is not one.  I call this a “why I run food.”

Chocolate covered peanut butter pretzel sandwiches.  Exactly what it sounds like, and tastes better than you are even already drooling about.  These treats are perhaps the best food item I’ve ever assembled.  I brought them to a party on Friday and everyone was raving.  One girl took a to-go bag home for her husband.  I saw multiple people grab one last sandwich on their way out the door.  They were long gone before the party was over.  That, my readers, is a successful treat.

Chocolate Covered Peanut Butter Pretzel Sandwiches

1 cup smooth peanut butter
2 tablespoons butter (softened)
1/2 cup powdered sugar
3/4 cup packed brown sugar
mini pretzels
milk chocolate bark

Mix the peanut butter and regular butter in a medium bowl.  I used a fork.

Add the sugars into the peanut butter mixture and combine completely.  It should be a almost doughy consistency that you can roll into balls. [if it is not, add more of either sugar gradually.]

Roll into small balls and set aside on cookie sheet.

Sandwich each ball between two mini pretzels.

Place tray of pretzel sandwiches in the fridge or freezer to set.  The original recipe suggests at least 30 minutes.  I’ve left mine in the freezer overnight when I make them.

After chilling, melt your chocolate bark according to the package instructions.

Dip each sandwich into the chocolate halfway and return to the cookie sheet.

When all are dipped, return the sheet to the fridge or freezer to let the chocolate set.

Serve and enjoy!  I suggest making these to share, because these suckers are dangerously delicious.

The first time I made these, the yield was 100 sandwiches.  The second time (photographed below), I used more filling per pretzel and got 54 sandwiches.  Although the time involved is greater the more filling balls you roll, I preferred the ratio of filling to pretzel to chocolate more when it got up to 100 sandwiches.

My choices for brands.

mix peanut butter and butter

add your sugars

mix to doughy consistency 

roll into balls (while watching Modern Family on an iPad propped up on a toaster)

sandwich each ball between 2 pretzels

prepare your chocolate coating for melting

dip each sandwich into the melted chocolate

return dipped sandwiches to tray

your delicious final product!

if you have leftover melted chocolate, do something fun, like giving gummy bears chocolate pants!

    Oh my dear god in heaven. It’s like a Take 5 Candy bar (minus the caramel). Or, I love the chocolate covered peanut butter pockets that you can get at (of all places) the Fresh Market. The regular peanut butter pretzel pockets are also very good, but then I discovered the chocolate ones. Anything is good when dipped in chocolate.

    Looks absolutely delicious! I love pretzel and chocolate as a combination but this looks awesome!
